One of my all-time favorite brunch recipes.
1 refrigerated pie crust
1 10 oz package frozen spinach, thawed and squeezed dry
1 1/2 Cups cream
5 egg
1/2 Cups chopped onion, sauteed in butter
1 3/4 cups shredded cheese of your choice (cheddar, swiss, etc)
1/8 Teaspoon nutmeg
salt and black pepper
Optional Ingredients:
1/2 Cup sliced, sauteed button mushrooms
6 Slices crumbled bacon
1/2 cup diced ham
Sautéed leeks
Preheat oven to 400. Lay pie crust in 9 inch pie plate and press in with fork or crimp on edges. Par bake the crust for ten minutes. In a large mixing bowl, combine eggs and cream and beat together quickly with whisk. Add all other ingredients. Pour this mixture into the pie crust. Bake at 400 degrees for 35 - 45 minutes, until lightly browned and set in the center
