Classic Bruschetta
A timeless appetizer.
4 Cloves garlic, minced (divided)
1/3 Cup(s) olive oil (approximate)
3 Tablespoon(s) balsamic vinegar
1/8 Cup(s) chopped fresh basil leaves
5 tomatoes, diced
grated parmesan cheese - to taste
salt and black pepper
french bread
additional olive oil for brushing
Cut the french bread into thin slices. Brush with olive oil and two cloves minced garlic. Bake in the oven at 375 degrees for a few minutes until they are lightly browned. Combine all other ingredients except cheese, stir, and let sit for a few minutes to marinate the flavors. Top each crostini (bread slice) with a small amount of the tomato mixture (draining off most of the liquid). Top with freshly shredded parmesan. Bake again for approximately five minutes, until heated through.
