1 (16 oz.) box rigatoni pasta
1 lb. cooked chicken or turkey breast, diced
1/2 package (9 oz.) dried cherries
1/3 to 1/2 cup finely chopped yellow onion
1/2 cup finely chopped celery
1 (scant) cup mayonnaise (recommended: Hellman's)
1 T Dijon mustard
1/8 cup baker's sugar
salt & pepper, to taste
1/4 tsp. poppy seeds
1/2 cup toasted almonds, divided (optional)
Prepare pasta according to package directions; rinse with cold water and drain.
In large bowl, combine pasta, chicken, cherries, onion and celery.
In small bowl, combine mayonnaise, mustard, sugar, salt, pepper and poppy seeds until thoroughly combined.
Stir salad dressing into salad ingredients along with 3/4 cup almonds; top with remaining almonds.
