Another thing Pete does well - make these!
3/4 of a lime, wedged
2 oz rum (recommended: Mt. Gay)
a handful of fresh mint leaves
2-3 finger pour of club soda or cava, if you have it
1/2 oz simple syrup (or 1.0 oz raspberry syrup)
Place lime wedges in a cocktail shaker. Muddle mint into lime wedges very well - more is more. Add 2 oz. rum and pour into a cocktail glass. Top with 2-3 finger pour of soda or cava. Garnish with a lime and a straw. Sip!
