1/2 lb. Italian sausage
1/2 cup onion, diced
1/2 cup carrots, diced
1/2 cup green pepper, diced
1 clove garlic, minced
1/2 zucchini, diced
1/2 cup white wine
4 1/2 cups chicken broth
1 1/2 cup tomatoes with juice (stewed works)
Pinch of Basil
Pinch of oregano
1/2 tsp salt
1/8 tsp pepper
1/2 cup uncooked orzo pasta (must be orzo!)
3 tbsp. Parmesan cheese
Brown the sausage in a medium soup kettle; drain the grease. Add the onions and cook for 3 minutes over medium heat. Add the other veggies and cook for 4 minutes longer. Combine everything else but the pasta and cheese and simmer for several minutes. Add the uncooked pasta and cook until tender. Add the cheese just before serving.
