Wok Hai Vegetable Stir Fry
Serves 4
Ingredients
3 tablespoons peanut oil
1 tablespoon ginger, minced
1 clove garlic, minced
1 dried hot chile (optional)
1 cup bok choy, sliced
1 cup pea pods, sliced
1/2 cup carrots, chopped julienne
1/2 cup shiitake mushrooms, sliced
1/2 cup asparagus, sliced
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
2 teaspoons sesame oil
Directions
1. Preheat a large wok over high heat
2. Add oil (oil should make smoke right away)
3. Add ginger, garlic, and chile. Swirl once and add the veggies, tossing well.
4. Add the hoisin and oyster sauce, toss and sprinkle with sesame oil. Serve over hot rice.
