Perfect Apple Crisp
The perfect balance of crumbly topping and sweet, cinnamony apples.
Apple Base
8 medium apples; cored, peeled, and chopped
1/4 cup rum, apple cider or juice, or water
1/2 lemon, squeezed
3/4 cup brown sugar
2 tablespoons melted butter
1 1/2 teaspoons Apple Pie Spice; or 1 teaspoon ground cinnamon + 1/4 teaspoon ground nutmeg + 1/4 teaspoon ground ginger
3 tablespoons flour
1/4 teaspoon salt
Crumble Topping
3/4 cup All-Purpose Flour
1/2 cup quick oats
heaping 1/4 teaspoon salt
2/3 cup brown sugar, light or dark
1 teaspoon ground cinnamon
3/4 teaspoon baking powder
8 T cold butter, cut into pat
Directions
Peel, core, and chop the apples to make about 9 cups prepared apples (approximately 2 lbs.) Lightly grease a 9x9 square metal pan and set aside. Combine chopped apples with all other apple base ingredients and place in the greased pan.

In a medium-sized bowl, combine flour, oats, salt, brown sugar, cinnamon, and baking powder. Add 8 T of butter (cut into pats) and work until crumbly. Sprinkle over apples. Set the crisp on a parchment-lined baking sheet (to catch any potential drips), and bake the crisp in a preheated 350°F oven for about 60 minutes.

Cool atleast 20 minutes before serving. Serve with vanilla ice cream or whipped cream.
