A simple, delicious dinner.
4 chicken breasts
3/4 c apricot preserves
1 c chicken broth
1 T soy sauce
1/4 c chopped green onions
Season chicken breasts with salt and pepper. Brown chicken in canola oil. Remove from pan. Add apricot preserves, green onions, broth and soy sauce. Bring to a boil; boil for four minutes. Add chicken back to pan and cook all the way through, spooning the sauce over the chicken while it cooks. Serve with brown rice.
