Top with marinara sauce for a satisfying meal.
1 cup ricotta
1 lb. frozen spinach, thawed and squeezed dry
1 cup freshly grated parmesan
2 eggs + 2 yolks
pinch of nutmeg
salt and pepper
5 T flour + 1 cup for dredging
Boil salted water in medium saucepan. In separate bowl combine first five ingredients. Season with salt and pepper. Mix together with hands. Form palm-sized patties and dredge in flour. Cook for four minutes or until floating. Top with marinara sauce and fresh mozzarella cheese.
